CRAVING A PUMPKIN SPICE LATTE BUT NOT THE CALORIES THAT COME WITH IT?

Pumpkin Spice Lattes signify the start of Fall, and boy do we need that in Houston, when the weather just will not cooperate.  While it may be tempting to grab a PSL on the way to work each morning, the 380 calories in a grande size are the equivalent to full meal.  Save some calories and some money with the following recipe for a quick, easy, healthy, and delicious Pumpkin Spice Latte!

 

What You’ll Need:

 

  • 1 Freshly Brewed Cup of Your Favorite Coffee
  • 1 Teaspoon of Almond Butter (You can sub cashew butter or no-nut butter if you’re allergic) – this is where the creaminess comes from
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Pumpkin Puree (unsweetened, plain)
  • ¼ Teaspoon of Pumpkin Pie Spice (store bought or homemade)

 

Directions: Place in a blender and blend until creamy and frothy.  Enjoy!

 

Extra Tip: If you’d like to top this with a dairy-free whipped cream, try refrigerating a 14 oz can of coconut milk overnight, skimming the fat off the top (leave the water for another use), and whipping it with ¼ c icing sugar until it resembles whipped cream consistency.  This will keep in the fridge for 1-2 weeks, but you will need to re-whip prior to each use. This coconut whip goes great with the creaminess of the PSL!
